I don't want to cheap out either. Money isn't really a price. My grants should cover it and what they can't my fiance will help with.
I know I need a lot of space. My computer at home has no more space because I have over 16 thousand pictures on it and need to get a stick. But that is not the case here.
Need help picking out a mac book. Do they have one of those custome computer building things like dell has?

Apple will not let you customize to the degree that PC makers like Dell will, but you do have a few options to choose from.
If you're into photography or any kind of art at all, Mac is totally the way to go. Macbook Pro is the best, but most expensive. Go for the one with the high resolution screen!
Edit: Some people are advising you not to get a Mac. While the Mac vs. PC debate may never be solved, I think there are a couple things that you should know. Macs are more stable because running in the back of Mac OS is Unix, which is renowned for stability. Also, Macs are less prone to virus attacks- partly because there is better protection built in, partly because more there aren't as many Macs out there, so they feel its not worth their time.
But most importantly, you are an artist, and Mac has historically been the artist's computer. That's not changing anytime soon. When you start photography school, it will probably be assumed that you have one.
